Ingredients for this sautéed carrots recipe
Fresh Carrots- You can either use small or baby carrots or cut them into a similar size so that they cook evenly.
Butter- You can use salted or unsalted butter- whatever you have on hand! If you use unsalted butter you may need to add a little extra salt, so just be sure to taste and adjust to your preference.
Honey- The sweetness of the carrots pairs so well with the sweetness of the honey.
Lemon Zest- this is optional, but the little pops of lemon zest bring in a touch of brightness and acidity. Or, if you prefer you can squeeze some lemon juice over the carrots before serving.
Salt- Use to taste, or about one a teaspoon.
Water- used to steam the carrots and make them tender.
How to make Carrots with Honey Glaze
In a sauté pan or cast iron skillet, add the carrots in a single layer. Add enough water to cover halfway up the sides of the carrots in the pan.
Add the butter, honey, salt and lemon zest.
Bring the water to a boil over medium-high heat. Partially cover the pan with a lid but allow some steam to come out. Reduce to a simmer on about medium-low heat and cook for about 10 minutes, or until the carrots are fork tender.
Uncover the pan and continue to let the water evaporate on about medium heat until the honey starts to caramelize. This will take about 5 minutes.
Transfer to a serving bowl and garnish with fresh parsley for a pop of color and a sprinkle of kosher salt. Serve right away and enjoy!
How to store cooked carrots
To store the honey glaze carrots, transfer them to an airtight container and store them in the fridge for up to 5 days. To reheat, pop in the microwave for 30 seconds and enjoy. You can also just pop them in the oven or sauté them a bit longer in the pan to reheat!
