Cucumbers are a delicious summer treat that can be enjoyed in so many ways. But what if you could enjoy them all winter long without the hassle of canning? This cucumber relish stores in a gallon jar for months in the fridge to give that delish cucumber crunch without needing a canning pot!

All of the ingredients will quickly mix together into a bowl and store! We’ve successfully eaten this for four months from half gallon jars long after cucumber season has ended.
What we can’t grow on the farm we are happy to shop Azure Standard for bulk spices and seasonings. Azure allows us to buy bulk organic products for what’s not coming off the farm!
Ingredients
- 9 cup diced cucumbers (about 18 of our slicing cucumbers)
- 1 cup diced onion (half a medium onion)
- 1 cup diced green pepper (1 large pepper)
- 2 cups sugar
- 1 cup vinegar
- 2 tablespoons pickling salt
- 1 tablespoon celery seed

Directions
- Mix all ingredients together.
- Allow ingredients to sit for one hour to blend flavors
- Then, place into jars and refrigerate to enjoy long after cucumber season is over!

Cucumber Relish
Ingredients
- 9 cups diced cucumbers
- 1 cup diced onions
- 1 cup diced green pepper
- 2 cups sugar
- 1 cup vinegar
- 2 tablespoons pickling salt
- 1 tablespoon celery salt
Instructions
- Mix all ingredients together.
- Let ingredients stand for one hour.
- Then, place relish in jars and refridgerate.
