All of the ingredients will quickly mix together into a bowl and store. We’ve successfully eaten this for four months from half-gallon jars long after cucumber season has ended. Ingredients for Cucumber Salad
This is the best cucumber salad, it is so simple, yet so flavorful! It’s a great way to use up crisp cucumbers from your garden, or if you want to buy extra from our farm to continue to enjoy during the off-season!
Here is what you will need:
Fresh Cucumbers – you can use any type of cucumbers you like such as English cucumbers, or Slicing cucumbers. It is up to you if you want to keep the cucumber peels on! For this recipe, you will dice the cucumbers.
Diced onion- you will need about half a medium onion, choose your favorite types such as red onions, white onions, or sweet onions.
Diced green pepper – you’ll need about 1 green pepper. This adds more crunch and a bit of bite. Use a colored pepper for some color!
Sugar – white granulated sugar
Vinegar – We use white vinegar for this recipe but you could try another such as apple cider vinegar or red wine vinegar for a different taste
Pickling salt
Optional: fresh herbs such as fresh dill would make a great addition to this salad.
How to make the Cucumber Salad for long-term storage
Add the vinegar, sugar, salt and celery seed to a large bowl. Stir to combine the solution together so it evenly coats the cucumbers.
Next, add your diced cucumber, onion, and green bell pepper to the vinegar mixture. Stir to fully combine. You want to ensure all the fresh ingredients are fully covered with the vinegar.
Allow ingredients to sit for one hour to blend flavors before enjoying.
Then, place into jars or an airtight container and refrigerate to enjoy long after the cucumber season is over!
How to store Cucumber Salad
To store the cucumber salad, simply add it to jars and keep it in the fridge. The vinegar solution will keep the salad good for up to 4 months! Freezing the cucumber salad would ne okay, but the cucumbers will stay crunchy in the fridge, yielding a much better product!

Ingredients
- 9 cups diced cucumbers
- 1 cup diced onions
- 1 cup diced green pepper
- 2 cups sugar
- 1 cup vinegar
- 2 tablespoons pickling salt
- 1 tablespoon celery salt
