Sautéed Carrots with Honey Butter Glaze

- 1.5 pounds carrots cut in similar size
- 2 Tbsp butter
- 2 Tbsp honey
- 1 tsp salt
- 1 tsp lemon zest optional!
Place carrots in a single layer in a skillet or cast iron pan. Add enough water to cover halfway up the sides of the carrots.
Add butter, honey, lemon zest and 1 t salt.
Bring to a boil and partially cover the pan with a lid but allow some steam to come out, simmer for about 10 minutes until carrots can be pierced with a fork.
Uncover the pan and continue to let the water evaporate and honey begins to caramelize (about 5 minutes).
Top with more salt and serve right away!
