Sautéed Carrots with Honey Butter Glaze

Ingredients
  

  • 1.5 pounds carrots cut in similar size
  • 2 Tbsp butter
  • 2 Tbsp honey
  • 1 tsp salt
  • 1 tsp lemon zest optional!

Instructions
 

  • Place carrots in a single layer in a skillet or cast iron pan. Add enough water to cover halfway up the sides of the carrots.
  • Add butter, honey, lemon zest and 1 t salt.
  • Bring to a boil and partially cover the pan with a lid but allow some steam to come out, simmer for about 10 minutes until carrots can be pierced with a fork.
  • Uncover the pan and continue to let the water evaporate and honey begins to caramelize (about 5 minutes).
  • Top with more salt and serve right away!
