Homemade Rhubarb BBQ Sauce

Cook Time 30 minutes

Ingredients
  

  • 16 cups chopped rhubarb roughly 1 cup per stalk Frozen rhubarb works well, too!
  • 7 cups brown sugar
  • 3 cups raisins
  • 1 cup chopped onion OR 4 Tablespoon dried minced onion
  • 1 cup white vinegar
  • 2 teaspoon allspice ground
  • 2 teaspoon cinnamon
  • 2 teaspoon ginger ground
  • 2 teaspoon salt

Instructions
 

To Make BBQ Sauce:

  • Combine rhubarb and all other ingredients in a stainless steel pan.
  • Bring to a boil, stirring often until the mixture has thickened to look like a store-bought BBQ sauce. It should take about 30 minutes.
  • You can choose to leave the sauce as is, or use an immersion blender or food processor to blend sauce for a smooth consistency (see recommended kitchen tools here!)
  • Choose to freeze or can!

To Can:

  • Fill pint-sized mason jars with BBQ sauce and leave 1/2 inch headspace
  • In a water bath canner, cover with water and process for 15 minutes
  • Store and enjoy for future use!
